Ingredients
  

Sauce
  • 2 tbsp olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 carrot finely chopped
  • 1 stalk celery finely chopped
  • 16 oz mushrooms finely chopped
  • 2 tbsp tomato paste
  • 14 oz crushed tomatoes or tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 1 tsp balsamic vinegar optional
  • 0.5 cup vegetable broth as needed
For Serving
  • 12 oz pasta spaghetti or rigatoni
  • fresh basil for garnish
  • grated Parmesan or vegan alternative

Equipment

Method
 

  1. Cook pasta according to package directions; reserve 1/2 cup cooking water.
  2. Sauté onion, garlic, carrot, and celery in olive oil for 5–6 minutes.
  3. Add mushrooms and cook 8–10 minutes until browned.
  4. Stir in tomato paste, then add crushed tomatoes, herbs, salt, pepper, and balsamic vinegar.
  5. Simmer 10 minutes, adding broth or pasta water to thin if needed.
  6. Toss pasta with sauce, garnish with basil and Parmesan, and serve hot.
