Ingredients
  

Pasta
  • 12 oz pasta penne or rigatoni
  • 1 lb Italian sausage mild or spicy
  • 2 tbsp olive oil
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved

Equipment

  • Large pot
  • Large skillet
  • Colander

Method
 

  1. Cook pasta until al dente; reserve pasta water.
  2. Brown sausage in a skillet and remove.
  3. Sauté vegetables, then return sausage and pasta.
  4. Add pasta water, toss, and finish with Parmesan.

Notes

Use pasta water to adjust sauce consistency.
