Pasta
  • 12 oz rigatoni or penne pasta
Sauce
  • 1 cup pumpkin puree
  • 0.5 cup heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese plus more for serving
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp chili flakes optional
  • 6 leaves fresh sage, chopped plus extra for garnish
  • 3 slices bacon, cooked and crumbled optional

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Melt butter and sauté garlic and sage until fragrant.
  3. Add pumpkin puree and cream; whisk until smooth.
  4. Season with nutmeg, salt, pepper, and chili flakes.
  5. Add pasta and a splash of pasta water; toss well.
  6. Stir in Parmesan and bacon; serve immediately.
