Ingredients
  

Stuffed Peppers
  • 4 large bell peppers any color
  • 1/2 lb Italian sausage mild or spicy
  • 2 cups cooked pasta rotini, penne, or shells
  • 1 1/2 cups Alfredo sauce
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese divided
  • 2 cloves garlic minced
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes optional
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley chopped, for garnish
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Slice tops off peppers, remove seeds, brush with olive oil, and roast for 10 minutes.
  2. Cook sausage in a skillet over medium heat until browned. Add garlic and cook 1 minute.
  3. In a bowl, mix cooked pasta, sausage, Alfredo sauce, Parmesan, half the mozzarella, and seasonings.
  4. Stuff peppers with the creamy mixture and top with remaining mozzarella.
  5. Bake 20–25 minutes until bubbly and golden.
  6. Garnish with parsley and serve with extra Alfredo sauce if desired.

Notes

Pre-roast the peppers for the best tender texture and flavor.
