- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Whisk flour, baking powder, baking soda, and salt together.
- Cream butter and sugar, then beat in eggs and extracts.
- Alternate adding dry ingredients and milk; mix until just combined.
- Fold in cherries and almonds, pour into loaf pan, sprinkle extra almonds.
- Bake 55–65 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use frozen cherries without thawing to avoid excess moisture. Wrap well for freezer storage.
