Ingredients
  

  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 tsp almond extract
  • 0.75 cup milk
  • 1.5 cups cherries fresh or frozen, halved and pitted
  • 0.5 cup sliced almonds plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk flour, baking powder, baking soda, and salt together.
  3. Cream butter and sugar, then beat in eggs and extracts.
  4. Alternate adding dry ingredients and milk; mix until just combined.
  5. Fold in cherries and almonds, pour into loaf pan, sprinkle extra almonds.
  6. Bake 55–65 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use frozen cherries without thawing to avoid excess moisture. Wrap well for freezer storage.
