Baked Oatmeal
  • 3 cups rolled oats old-fashioned
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 apples peeled and diced
  • 2 cups milk dairy or plant-based
  • 2 eggs
  • 0.5 cup maple syrup
  • 0.25 cup brown sugar
  • 4 tbsp butter melted
  • 2 tsp vanilla extract
Streusel Topping
  • 0.25 cup brown sugar
  • 0.25 cup rolled oats
  • 2 tbsp butter softened
  • 0.5 tsp cinnamon

Method
 

  1. Preheat oven to 350°F and grease a 9x9 baking dish.
  2. Mix oats, spices, baking powder, salt, and apples in a bowl.
  3. Whisk milk, eggs, maple syrup, brown sugar, melted butter, and vanilla.
  4. Combine wet and dry ingredients and pour into baking dish.
  5. Mix streusel ingredients and sprinkle on top.
  6. Bake 40–45 minutes or until set and golden.
