Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground turmeric
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 head cauliflower cut into florets
  • 6 cups chicken bone broth
  • 2 cups cooked chicken shredded

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add garlic and ginger.
  3. Stir in turmeric and spices.
  4. Add vegetables and broth; simmer until tender.
  5. Stir in shredded chicken and season to taste.

Notes

Blend part of the soup for a creamier texture if desired.
