Salad
  • 5 cups fresh arugula washed and dried
  • 2 red apples thinly sliced
  • 0.5 red onion thinly sliced
  • 0.5 cup pecans toasted
  • 0.33 cup goat cheese crumbled
  • 2 figs halved, optional
  • 0.25 cup vinaigrette balsamic or honey mustard

Method
 

  1. Arrange arugula in a large salad bowl.
  2. Fan out apple slices evenly over greens.
  3. Add red onion slices for sharp contrast.
  4. Sprinkle toasted pecans and crumble goat cheese on top.
  5. Tuck in fig halves if using.
  6. Drizzle with vinaigrette before serving.
  7. Toss gently and serve fresh.

Notes

Best served immediately. For meal prep, slice apples just before serving to prevent browning.
