Donuts
  • 1.5 cups apple cider reduced to 1/2 cup
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp allspice
  • 0.5 tsp salt
  • 2 large eggs
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter melted
  • 0.5 cup whole milk
  • 1 tsp vanilla extract
Cinnamon Sugar Coating
  • 0.5 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 4 tbsp unsalted butter melted for brushing

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 6-cavity donut pans.
  2. Reduce apple cider to 1/2 cup by simmering for 10–15 minutes. Cool completely.
  3. Whisk dry ingredients: flour, baking powder, baking soda, spices, and salt.
  4. Mix wet ingredients: eggs, sugars, melted butter, milk, vanilla, and reduced cider.
  5. Fold dry ingredients into wet ingredients until just combined.
  6. Fill donut pans 3/4 full and bake for 12–14 minutes.
  7. Mix cinnamon and sugar for coating.
  8. Brush warm donuts with melted butter and toss in cinnamon sugar.

Notes

For stronger apple flavor, reduce cider even further or add 1/2 teaspoon apple extract.
