Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 eggs
  • 1.25 cups milk
  • 1 tbsp sugar
  • 1 tbsp butter melted
  • 0.5 tsp vanilla extract
  • pinch of salt
Apple Filling
  • 3 apples peeled and diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with water

Equipment

  • Mixing bowl
  • Nonstick skillet
  • Whisk
  • Spatula

Method
 

  1. Whisk together flour, eggs, milk, sugar, melted butter, vanilla, and salt until smooth.
  2. Let batter rest for 15 minutes.
  3. Cook diced apples in butter until soft.
  4. Add brown sugar, cinnamon, nutmeg, and lemon juice and cook until fragrant.
  5. Stir in cornstarch mixture and cook until slightly thickened.
  6. Pour batter into hot skillet and swirl thinly.
  7. Cook crepe about 1 minute, flip, and cook another 30 seconds.
  8. Fill crepes with apple mixture and fold.
  9. Serve warm with powdered sugar and syrup.

Notes

Crepe batter can be blended for extra smoothness. Keep cooked crepes covered so they stay soft.
