Method
- Preheat oven to 350°F (175°C). Prepare a springform pan with parchment paper.
- Mix crust ingredients and press into pan. Bake 10 minutes.
- Reduce oven temperature to 325°F (165°C).
- Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream.
- Pour filling over crust and smooth the top.
- Toss apples with sugar, spices, lemon juice, and cornstarch. Spoon over filling.
- Combine crisp topping ingredients and sprinkle over apples.
- Bake 55–65 minutes until set. Cool gradually and chill before serving.
Notes
Allow cheesecake to cool gradually to prevent cracking.
