Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 tsp cinnamon
  • 0.5 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
Apple Layer
  • 3 cups apples peeled and diced
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
Crisp Topping
  • 0.75 cup rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter cold and cubed

Equipment

  • Springform pan
  • Mixing bowls
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a springform pan with parchment paper.
  2. Mix crust ingredients and press into pan. Bake 10 minutes.
  3. Reduce oven temperature to 325°F (165°C).
  4. Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream.
  5. Pour filling over crust and smooth the top.
  6. Toss apples with sugar, spices, lemon juice, and cornstarch. Spoon over filling.
  7. Combine crisp topping ingredients and sprinkle over apples.
  8. Bake 55–65 minutes until set. Cool gradually and chill before serving.

Notes

Allow cheesecake to cool gradually to prevent cracking.
