Ingredients
  

Pancake Batter
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk whole or 2%
  • 2 large eggs
  • 2 tablespoons unsalted butter melted, plus more for cooking
  • 1 teaspoon vanilla extract
  • 1 medium apple peeled and finely diced
  • Maple syrup for serving

Method
 

  1. Whisk flour, sugar, baking powder, baking soda, salt, and cinnamon together in a large bowl.
  2. In another bowl, whisk milk, eggs, melted butter, and vanilla until combined.
  3. Pour wet mixture into dry ingredients and stir gently until just combined. Do not overmix.
  4. Fold in the diced apples.
  5. Heat skillet or griddle over medium heat and grease lightly with butter.
  6. Scoop 1/4 cup batter per pancake and cook until bubbles form, 2–3 minutes. Flip and cook 1–2 minutes more.
  7. Serve warm with butter, maple syrup, and apple slices.

Notes

Best served fresh, but leftovers can be refrigerated or frozen.
