Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar packed
  • 1 cup vegetable oil
  • 3 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 3 cups peeled and chopped apples Granny Smith or Honeycrisp
  • 1 cup chopped pecans
Caramel Glaze
  • 1/2 cup unsalted butter
  • 1 cup brown sugar packed
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt or 9x13-inch pan.
  2. Whisk flour, baking soda, cinnamon, nutmeg, and salt together.
  3. Beat granulated sugar, brown sugar, and oil until combined.
  4. Add eggs and vanilla, mixing well.
  5. Stir in dry ingredients until just combined.
  6. Fold in apples and pecans.
  7. Pour into pan and bake 50–60 minutes, until a toothpick comes out clean.
  8. Cool for 15 minutes, then invert onto a wire rack.
  9. In a saucepan, melt butter, add brown sugar and cream, and simmer 2–3 minutes.
  10. Remove from heat, stir in vanilla and salt, and drizzle glaze over cake.

Notes

Use tart apples for balance and toast pecans for deeper flavor. Warm glaze slightly before pouring if it thickens.
