Pancake Batter
  • 1.5 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted plus more for greasing
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and diced Honeycrisp or Gala
  • 1 tablespoon lemon juice to prevent browning
Vanilla Maple Syrup
  • 0.5 cup pure maple syrup
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, mix buttermilk, eggs, melted butter, and vanilla until combined.
  3. Combine wet and dry ingredients until just mixed; fold in diced apples coated with lemon juice.
  4. Heat a skillet with butter and pour 1/4 cup batter per pancake; cook until golden on both sides.
  5. In a saucepan, warm maple syrup, butter, and vanilla extract until smooth. Serve over pancakes.

Notes

For extra flavor, sprinkle cinnamon sugar on top before serving.
