Ingredients
  

Brown Stew Chicken
  • 2 lb chicken pieces bone-in
  • 1 tbsp browning sauce
  • 1 tbsp soy sauce
  • 4 cloves garlic minced
  • 3 stalks scallions chopped
  • 4 sprigs fresh thyme
  • 1 large onion sliced
  • 1 large bell pepper sliced
  • 2 medium carrots sliced
  • 1 whole Scotch bonnet pepper optional
  • 1 tsp allspice
  • 2 tbsp vegetable oil
  • 1 1/2 cups chicken stock

Equipment

  • Large heavy pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Season and marinate chicken with spices, herbs, soy sauce, and browning sauce.
  2. Brown chicken pieces in hot oil until deeply golden.
  3. Sauté vegetables in the same pot until fragrant.
  4. Return chicken, add liquid, and simmer until tender.
  5. Adjust seasoning and serve hot.

Flavor deepens after resting; excellent the next day.
