Pork Filling
  • 2 lbs pork shoulder
  • 6 dried chiles guajillo and ancho
  • 3 cloves garlic
  • 0.5 onion
Masa
  • 4 cups masa harina
  • 1 cup lard
  • 3 cups broth
Assembly
  • 25 corn husks

Method
 

  1. Soak corn husks.
  2. Cook and shred pork.
  3. Make chile sauce and mix with pork.
  4. Prepare masa dough.
  5. Assemble tamales.
