Ingredients
  

Autumn Sausage Pasta
  • 12 oz pasta rigatoni or penne
  • 1 lb Italian sausage
  • 2 cups Brussels sprouts, halved
  • 2 cups cubed butternut squash
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup reserved pasta water
  • 1 tbsp butter

Equipment

  • Mixing bowls

Method
 

  1. Roast Brussels sprouts and butternut squash with olive oil and seasoning.
  2. Cook pasta and reserve pasta water.
  3. Brown Italian sausage and add garlic.
  4. Stir in cream and Parmesan to create a sauce.
  5. Combine pasta, roasted veggies, and sauce.
  6. Serve warm, garnished with herbs.

Notes

For extra flavor, roast veggies until deeply caramelized.
