Ingredients
  

  • 6 large eggs
  • 1 avocado ripe
  • 1 tbsp lime juice
  • 1 tsp Dijon mustard
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp chives chopped
  • 1 tsp smoked paprika for garnish

Method
 

  1. Boil eggs and cool completely before peeling.
  2. Slice eggs and remove yolks.
  3. Mash yolks with avocado until smooth.
  4. Stir in lime juice, mustard, garlic powder, salt, and pepper.
  5. Fill egg whites with mixture and garnish.

Notes

Best served fresh due to avocado oxidation. Add extra lime juice if preparing ahead.
