Salad
  • 2 cups ripe mango diced
  • 2 large avocados diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
Lime Dressing
  • 3 tbsp lime juice fresh
  • 1 tsp lime zest
  • 3 tbsp olive oil extra virgin
  • 1 tsp honey or maple syrup
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

  1. Combine mango, avocado, red onion, and cilantro in a bowl.
  2. Whisk lime juice, zest, olive oil, honey, salt, and pepper.

Best served fresh; add avocado just before serving if prepping ahead.
