Ingredients
  

Avocado Shrimp Ceviche
  • 1 lb cooked shrimp diced
  • 2 ripe avocados diced
  • 2 tomatoes diced
  • 1/2 red onion finely chopped
  • 1 jalapeño minced
  • 1/2 cup lime juice fresh
  • 1/4 cup lemon juice
  • 1/4 cup cilantro chopped
  • 1 cucumber diced, optional
  • salt to taste
  • black pepper to taste
  • lime wedges for serving

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Dice shrimp and add to a mixing bowl.
  2. Add tomatoes, onion, jalapeño, and cilantro.
  3. Pour in lime and lemon juice and stir to coat.
  4. Season with salt and pepper.
  5. Let rest 10–15 minutes to blend flavors.
  6. Fold in avocado gently.
  7. Serve with chips or tostadas.

Notes

Add avocado at the end to maintain texture. Adjust lime juice to taste.
