Base
  • 2 slices whole-grain or sourdough bread toasted
  • 1 ripe avocado
  • 0.5 lemon juiced
  • 2 eggs poached or soft-boiled
  • sea salt to taste
  • black pepper to taste
  • red chili flakes optional
  • fresh parsley or cilantro chopped, for garnish

Method
 

  1. Toast bread until golden and crisp.
  2. Mash avocado with lemon juice, salt, and pepper.
  3. Poach or soft-boil eggs, leaving yolks runny.
  4. Spread avocado mixture over toast slices.
  5. Top each toast with an egg and cut yolk gently.
  6. Garnish with chili flakes and herbs before serving.

Notes

For a richer flavor, drizzle with olive oil or top with cheese. Serve immediately while warm.
