Ingredients
  

  • 1 prepared pie crust
  • 4-5 medium ripe tomatoes sliced
  • 1 medium onion thinly sliced
  • 6-8 strips bacon cooked and crumbled
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup mayonnaise
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh basil or parsley chopped, optional

Method
 

  1. Preheat oven to 375°F (190°C) and blind bake pie crust for 8–10 minutes.
  2. Drain sliced tomatoes on paper towels for 15–20 minutes.
  3. Caramelize sliced onions in a skillet over medium heat.
  4. Layer tomatoes, onions, and bacon in the crust, season with pepper.
  5. Mix mayonnaise and cheddar cheese, spread over filling.
  6. Bake for 30–35 minutes until bubbly and golden.
  7. Cool slightly, garnish with herbs, slice, and serve.

Notes

For a sturdier crust, pre-bake a little longer or sprinkle breadcrumbs before layering. Store leftovers in the fridge for up to 3 days.
