- Preheat oven to 375°F (190°C) and blind bake pie crust for 8–10 minutes.
- Drain sliced tomatoes on paper towels for 15–20 minutes.
- Caramelize sliced onions in a skillet over medium heat.
- Layer tomatoes, onions, and bacon in the crust, season with pepper.
- Mix mayonnaise and cheddar cheese, spread over filling.
- Bake for 30–35 minutes until bubbly and golden.
- Cool slightly, garnish with herbs, slice, and serve.
Notes
For a sturdier crust, pre-bake a little longer or sprinkle breadcrumbs before layering. Store leftovers in the fridge for up to 3 days.
