Bacon Wrapped Green Bean Bundles

Tender green beans wrapped in smoky bacon, baked until caramelized and crispy. A perfect holiday side dish or appetizer.

Ingredients
  

Bundles
  • 1 pound fresh green beans, trimmed
  • 8-10 slices bacon preferably thin cut
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar optional
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt adjust to taste
  • fresh thyme or parsley for garnish

  • Baking sheet
  • Wire rack

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Blanch green beans in boiling water for 3–4 minutes, then shock in ice water. Drain well.
  3. Toss beans with olive oil, garlic powder, onion powder, salt, pepper, and brown sugar (if using).
  4. Divide beans into bundles (6–8 beans each). Wrap each with a slice of bacon and place seam-side down on baking sheet.
  5. Bake for 18–22 minutes until bacon is crispy and beans are tender.
  6. Remove from oven, garnish with thyme or parsley, and serve warm.

Notes

Best served fresh, but can be prepped ahead and refrigerated before baking.
