Ingredients
  

Chiles Rellenos Casserole
  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 15 oz tomato sauce
  • 2 cans whole green chiles, drained and opened
  • 2 cups Monterey Jack or pepper jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 5 eggs
  • 1 cup milk
  • 2 tbsp flour optional

Method
 

  1. Brown beef with onion and garlic, then add spices and tomato sauce.
  2. Layer half the green chiles in a greased baking dish.
  3. Spread beef mixture and half the cheese over chiles.
  4. Layer remaining chiles on top.
  5. Whisk eggs, milk, and flour, then pour over casserole.
  6. Top with remaining cheese and bake at 350°F for 35–40 minutes.

Notes

Use Hatch or poblano chiles for the best flavor. Let rest before slicing.
