- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper, lightly spraying with olive oil.
- Steam broccoli florets until tender, chop finely, and pat dry with paper towels.
- Combine chopped broccoli, cheddar, Parmesan, breadcrumbs, eggs, garlic powder, salt, and pepper in a large mixing bowl.
- Roll tablespoon-sized portions into balls and place on the prepared baking sheet.
- Spray tops lightly with olive oil and bake for 20–22 minutes until golden brown.
- Cool slightly before serving with your favorite dip.
Notes
For extra crunch, broil the balls for 1–2 minutes after baking. Great served with marinara or ranch dip.
