Ingredients
  

Broccoli Cheese Mixture
  • 2 cups broccoli florets steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 1 cup breadcrumbs panko or regular
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil spray for baking

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper, lightly spraying with olive oil.
  2. Steam broccoli florets until tender, chop finely, and pat dry with paper towels.
  3. Combine chopped broccoli, cheddar, Parmesan, breadcrumbs, eggs, garlic powder, salt, and pepper in a large mixing bowl.
  4. Roll tablespoon-sized portions into balls and place on the prepared baking sheet.
  5. Spray tops lightly with olive oil and bake for 20–22 minutes until golden brown.
  6. Cool slightly before serving with your favorite dip.

Notes

For extra crunch, broil the balls for 1–2 minutes after baking. Great served with marinara or ranch dip.
