Ingredients
  

  • 3 cups broccoli florets steamed and finely chopped
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 cup breadcrumbs divided
  • 2 eggs large
  • 2 cloves garlic minced
  • 0.5 tsp onion powder
  • salt and black pepper to taste
  • olive oil spray for baking

Equipment

  • Steamer or pot
  • Mixing bowl
  • Baking sheet
  • Parchment paper

Method
 

  1. Steam broccoli until tender and finely chop. Preheat oven to 400°F (200°C).
  2. Mix chopped broccoli, cheeses, garlic, onion powder, salt, pepper, eggs, and half the breadcrumbs.
  3. Form into balls and roll in remaining breadcrumbs.
  4. Bake on a lined sheet for 18–20 minutes, turning halfway through.
  5. Serve hot with your favorite dip.

Notes

These can be frozen before baking for up to 2 months. Bake directly from frozen, adding 5 extra minutes.
