Ingredients
  

  • 4 bell peppers halved and seeded
  • 2 medium chicken breasts cooked and shredded
  • 1 cup shredded mozzarella cheese divided
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice bell peppers lengthwise, removing seeds and membranes.
  3. Sauté onion and garlic in olive oil until softened.
  4. Mix shredded chicken, half the mozzarella, Parmesan, sautéed aromatics, seasoning, salt, and pepper.
  5. Stuff peppers with mixture and place in baking dish.
  6. Top with remaining mozzarella, cover with foil, and bake 20 minutes.
  7. Remove foil and bake 10–15 more minutes until cheese melts and peppers are tender.
  8. Garnish with fresh parsley or basil before serving.

Notes

These peppers can be prepared ahead and baked later. Freeze after baking for up to 2 months.
