Method
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Pat chicken dry, drizzle with olive oil, and season with spices.
- Spread sliced peppers in the baking dish, drizzle with oil, season lightly.
- Place chicken on top of peppers and bake for 25–30 minutes.
- Top with mozzarella and cheddar, bake until cheese is melted and bubbly.
- Remove from oven, rest 5 minutes, garnish with parsley, and serve hot.

This dish works great for meal prep and reheats beautifully.
