Base
  • 6 large eggs
  • 8 oz feta cheese block or large chunks
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 3 tbsp olive oil
  • 2 cloves garlic minced

Method
 

  1. Roast tomatoes with garlic, olive oil, and seasoning.
  2. Stir in spinach and add feta chunks.
  3. Create wells and crack eggs into the dish.
  4. Bake until egg whites are set and yolks are done to preference.
  5. Garnish and serve warm.
