  • 2 pounds baby potatoes halved
  • 1 block feta cheese 7–8 ounces
  • 0.25 cup olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 lemon lemon zest and juice

Method
 

  1. Toss potatoes with olive oil, garlic, herbs, and seasoning.
  2. Arrange potatoes in baking dish and add feta.
  3. Bake until potatoes are golden and feta is soft.
  4. Break feta apart, toss with potatoes, and garnish before serving.

Notes

Use block feta for best results.
