Method
- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- Toss potatoes with olive oil, garlic, oregano, salt, pepper, lemon zest, and half the lemon juice.
- Spread potatoes cut-side down and roast for 30 minutes.
- Add feta to the center of the pan and drizzle with olive oil.
- Bake another 15–20 minutes until potatoes are crispy and feta is soft.
- Break up feta gently, drizzle remaining lemon juice, garnish, and serve.
Notes
For extra crispiness, avoid overcrowding the pan and roast at high heat.
