  • 2 lb baby potatoes halved if large
  • 6 oz block feta cheese
  • 4 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 0.25 tsp red chili flakes optional
  • 0.5 lemon zested and juiced

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. Toss potatoes with olive oil, garlic, oregano, salt, pepper, lemon zest, and half the lemon juice.
  3. Spread potatoes cut-side down and roast for 30 minutes.
  4. Add feta to the center of the pan and drizzle with olive oil.
  5. Bake another 15–20 minutes until potatoes are crispy and feta is soft.
  6. Break up feta gently, drizzle remaining lemon juice, garnish, and serve.

Notes

For extra crispiness, avoid overcrowding the pan and roast at high heat.
