  • 3 ripe pears, halved and cored
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 3 tablespoons honey
  • 1 tablespoon olive oil
  • 1 pinch ground cinnamon
  • fresh thyme sprigs, for garnish
  • black pepper, optional

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice pears in half lengthwise, scoop out the cores, and arrange on baking sheet.
  3. Brush with olive oil, sprinkle with cinnamon, and bake for 15 minutes.
  4. Remove, fill with feta cheese, top with cranberries, drizzle honey.
  5. Return to oven for 10 minutes until cheese softens and cranberries plump.
  6. Garnish with thyme and black pepper. Serve warm.
