Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss halved potatoes with olive oil, garlic, oregano, salt, and pepper in a mixing bowl.
- Spread potatoes on the baking sheet, cut side down, and roast for 25–30 minutes, flipping halfway.
- Sprinkle hot potatoes with crumbled feta and toss lightly.
- Garnish with parsley and serve warm.
