Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp dried oregano or fresh herbs
  • salt and pepper to taste
  • 0.5 cup feta cheese crumbled
  • 2 tbsp parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss halved potatoes with olive oil, garlic, oregano, salt, and pepper in a mixing bowl.
  3. Spread potatoes on the baking sheet, cut side down, and roast for 25–30 minutes, flipping halfway.
  4. Sprinkle hot potatoes with crumbled feta and toss lightly.
  5. Garnish with parsley and serve warm.

Notes

Soak potatoes in cold water before roasting for extra crispiness. Serve immediately for best texture.
