Cookie Dough
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 0.25 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.33 cup granulated sugar for rolling

Method
 

  1. Whisk together dry ingredients in a bowl.
  2. Mix melted butter and brown sugar until smooth.
  3. Add molasses, egg, and vanilla and combine.
  4. Stir in dry ingredients and chill dough.
  5. Roll dough in sugar and bake until edges are set.

Notes

Do not overbake for the best soft and chewy texture.
