Ingredients
  

Muffin Batter
  • 1.5 cups mashed ripe bananas about 3 bananas
  • 0.5 cup unsalted butter melted
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup semi-sweet chocolate chips
Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.25 cup brown sugar
  • 3 tbsp unsalted butter cold, cubed
  • 0.25 tsp cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. Mash bananas and combine with melted butter, sugars, eggs, and vanilla extract.
  3. Whisk flour, baking powder, baking soda, and salt. Gently mix dry ingredients into wet ingredients.
  4. Fold in chocolate chips and divide batter evenly into muffin cups.
  5. Mix streusel ingredients until crumbly and sprinkle on top of muffins.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean. Cool slightly before serving.

Notes

Store muffins in an airtight container at room temperature for 2–3 days or freeze for up to a month.
