  • 2 ripe bananas mashed
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 1 cup chocolate chips
Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.33 cup brown sugar
  • 2 tbsp granulated sugar
  • 0.5 tsp cinnamon
  • 0.25 cup unsalted butter cold, cubed

Method
 

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners.
  2. Mash bananas in a bowl. Stir in melted butter, sugars, eggs, and vanilla.
  3. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Stir in chocolate chips, reserving some for topping.
  6. Divide batter evenly into muffin cups.
  7. Make streusel by mixing flour, sugars, and cinnamon. Cut in butter until crumbly.
  8. Sprinkle streusel over muffins and top with extra chocolate chips.
  9. Bake for 18–22 minutes until golden and a toothpick comes out clean.
  10. Cool slightly before serving. Store leftovers in airtight container.

Notes

These muffins freeze beautifully. Reheat in the microwave or toaster oven before serving.
