- Rinse pearl barley under cold water and drain well.
- Heat olive oil and butter in a large skillet over medium heat.
- Add onion and cook until soft and translucent.
- Stir in garlic and thyme, cooking until fragrant.
- Add mushrooms and cook until browned and tender.
- Stir in barley and pour in vegetable broth.
- Reduce heat, cover, and simmer until barley is tender and liquid absorbed.
- Season with salt and pepper, then serve warm.
Notes
For extra creaminess, stir occasionally during cooking and finish with Parmesan if desired.
