Ingredients
  

Base
  • 1 cup pearl barley
  • 2 cups mixed mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 tsp fresh thyme
  • salt and black pepper to taste

Method
 

  1. Rinse pearl barley under cold water and drain well.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add onion and cook until soft and translucent.
  4. Stir in garlic and thyme, cooking until fragrant.
  5. Add mushrooms and cook until browned and tender.
  6. Stir in barley and pour in vegetable broth.
  7. Reduce heat, cover, and simmer until barley is tender and liquid absorbed.
  8. Season with salt and pepper, then serve warm.

Notes

For extra creaminess, stir occasionally during cooking and finish with Parmesan if desired.
