BBQ Chicken Mac and Cheese
  • 8 oz elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked chicken, shredded
  • 1/2 cup barbecue sauce
  • 1/2 cup breadcrumbs optional topping
  • 1 tbsp melted butter for topping
  • 2 tbsp fresh parsley for garnish

Method
 

  1. Cook macaroni in salted boiling water until al dente, then drain.
  2. Melt butter in a saucepan, whisk in flour, and cook 1 minute.
  3. Gradually add milk and cream, whisking until thickened.
  4. Stir in seasonings and cheese until melted and smooth.
  5. Combine pasta, chicken, and BBQ sauce with cheese sauce.
  6. Transfer to baking dish, top with breadcrumbs and extra cheese, and bake at 375°F for 15–20 minutes.
  7. Drizzle with BBQ sauce and garnish with parsley before serving.

Notes

Perfect for weeknights or potlucks. Can be made ahead and reheated with a splash of milk.
