Ingredients
  

Black Bean Salad
  • 2 cans black beans, rinsed and drained
  • 1.5 cups corn fresh, frozen, or canned
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 0.25 cup red onion, finely diced
  • 0.5 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tsp chili powder
  • 0.5 tsp cumin
BBQ Ranch Dressing
  • 0.5 cup ranch dressing
  • 3 tbsp BBQ sauce
  • 1 tbsp lime juice
  • 0.25 tsp garlic powder

Method
 

  1. Combine black beans, corn, tomatoes, peppers, red onion, and cilantro in a bowl.
  2. Season with lime juice, chili powder, cumin, salt, and pepper.
  3. Whisk together ranch dressing, BBQ sauce, lime juice, and garlic powder.
  4. Pour dressing over salad and toss gently to coat.
  5. Chill for 15–30 minutes before serving.

Notes

Add avocado right before serving. Adjust BBQ-to-ranch ratio for sweetness or creaminess.
