Beef Filling
  • 1.5 pounds stewing beef cut into cubes
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 2 tablespoons flour
  • 1.5 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • 1 cup frozen peas
Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.5 cup cold butter cubed
  • 0.75 cup buttermilk
  • 1 tablespoon fresh parsley chopped

Equipment

Method
 

  1. Brown beef in olive oil over medium-high heat. Remove and set aside.
  2. Sauté onion, carrots, and celery until tender; add garlic.
  3. Stir in flour, then pour in broth, tomato paste, Worcestershire sauce, and herbs.
  4. Simmer with beef for 30 minutes; stir in peas.
  5. Mix biscuit dough ingredients until just combined.
  6. Transfer filling to baking dish, top with biscuit dough, brush with buttermilk.
  7. Bake at 400°F for 25–30 minutes until golden brown.
