Ingredients
  

Stew Base
  • 2.5 lb beef chuck cubed
  • 6 oz bacon chopped
  • 3 tablespoons olive oil
  • 1 large onion chopped
  • 3 medium carrots sliced
  • 3 cloves garlic minced
  • 3 tablespoons tomato paste
  • 3 cups dry red wine
  • 2 cups beef stock
  • 1 cup mushrooms sautéed
  • 1 cup pearl onions sautéed

Equipment

  • Dutch oven
  • Skillet
  • Wooden spoon

Method
 

  1. Brown bacon and beef in batches.
  2. Cook vegetables and tomato paste.
  3. Deglaze with wine and add stock and herbs.
  4. Braise in oven until tender.
  5. Add mushrooms and onions before serving.

Notes

Flavor improves after resting overnight.
