Ingredients
  

Beef & Broccoli
  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 cups broccoli florets
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch for beef
  • 0.25 tsp black pepper
Sauce
  • 0.5 cup low-sodium soy sauce
  • 0.33 cup beef broth or water
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch for sauce

Equipment

  • Mixing bowls
  • Large skillet or wok
  • Knife
  • Cutting board

Method
 

  1. Marinate sliced beef with 1 tablespoon cornstarch and a splash of soy sauce.
  2. Whisk all sauce ingredients together until smooth.
  3. Cook broccoli 3 minutes until bright green; remove and set aside.
  4. Sear beef in hot oil 1–2 minutes per side.
  5. Add broccoli back to the skillet.
  6. Pour sauce over beef and broccoli and cook until thick and glossy.

Notes

Slice beef thinly and against the grain for tenderness.
