Ingredients
  

Birria
  • 1.5 kg beef chuck
  • 4 guajillo chilies deseeded
  • 2 ancho chilies deseeded
  • 4 cups beef broth
Assembly
  • 12 corn tortillas
  • 2 cups shredded cheese Oaxaca or mozzarella

Equipment

  • Dutch oven or large pot
  • Blender
  • Baking dish

Method
 

  1. Cook beef slowly in blended chili sauce until tender.
  2. Shred beef and reserve consommé.
  3. Dip tortillas in sauce, fill with beef and cheese, and roll.
  4. Bake enchiladas with extra sauce and cheese until bubbly.

Notes

Serve with extra consommé and fresh toppings for best flavor.
