  • 1.5 lbs chicken thighs or breasts cut into bite-sized pieces
  • 2 tbsp freshly ground black pepper
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 3 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 cups mushrooms sliced
  • 0.5 tsp salt adjust to taste
  • 1 tsp sugar
  • 0.5 tsp chili flakes optional
  • fresh parsley or basil for garnish

Method
 

  1. Marinate chicken with cornstarch, soy sauce, and pepper for 15 minutes.
  2. Heat oil and sear chicken until golden, then set aside.
  3. Sauté onion and garlic in butter, then add mushrooms.
  4. Add sauces, vinegar, sugar, and pepper to create the sauce base.
  5. Return chicken, toss to coat, and cook until sauce thickens.
  6. Garnish with herbs and serve hot.

Notes

Freshly cracked pepper gives the best aroma and heat.
