Chicken Stir Fry
  • 1.5 lbs chicken thighs, diced
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 8 oz mushrooms, sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tsp freshly cracked black pepper
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 0.25 cup chicken broth
  • 0.5 tsp black pepper

Equipment

Method
 

  1. Toss chicken with soy sauce and cornstarch; set aside.
  2. Whisk all sauce ingredients in a bowl.
  3. Sear chicken until browned; remove from pan.
  4. Sauté mushrooms, onions, and bell peppers.
  5. Add garlic and ginger; cook until fragrant.
  6. Return chicken to pan and pour in sauce.
  7. Sprinkle with black pepper and simmer until thickened.
  8. Serve over rice, garnished with green onions.
