  • 2 sheets puff pastry thawed if frozen
  • 0.5 cup crumbled blue cheese Roquefort or Gorgonzola
  • 0.33 cup finely chopped walnuts lightly toasted
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten for egg wash
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon honey plus extra for drizzling
  • freshly ground black pepper to taste
  • sea salt flakes optional garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Combine blue cheese, walnuts, and thyme in a bowl.
  3. Lay one puff pastry sheet flat, spread the mixture evenly, and drizzle with honey.
  4. Top with second pastry sheet, seal edges, and brush with melted butter.
  5. Place a glass in the center, cut into strips from the center out, and twist each strip.
  6. Brush with egg wash, sprinkle with pepper and salt, and bake 20–25 minutes until golden.
  7. Drizzle with honey and thyme leaves before serving.

Notes

Best served warm. Ideal for parties or as a savory centerpiece for holiday gatherings.
