Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 6 tbsp cold unsalted butter cubed
  • 3/4 cup buttermilk
  • 1 cup fresh or frozen blueberries do not thaw if frozen
  • 1 lemon zest zest of 1 lemon
  • 1 tsp vanilla extract
Lemon Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest

Equipment

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Cut in cold butter until mixture forms coarse crumbs.
  4. Stir in lemon zest, vanilla, and blueberries.
  5. Add buttermilk and mix until dough forms.
  6. Pat dough into a rectangle, fold twice, and cut into rounds.
  7. Bake for 15–18 minutes until golden brown.
  8. Whisk glaze ingredients and drizzle over warm biscuits.

Notes

Keep butter cold for the flakiest biscuits. Glaze just before serving for best presentation.
