Jam Base
  • 2 cups fresh blueberries
  • 1/3 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried culinary lavender
  • 2 tablespoons water
  • 1 pinch salt

Method
 

  1. Simmer blueberries, water, lemon juice, zest, and salt.
  2. Mash berries slightly as they soften.
  3. Add honey and lavender and simmer until thickened.
  4. Cool and transfer to jars.

Notes

Jam thickens more as it cools; avoid overcooking.
