Ingredients
  

  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons granola
  • 1/2 banana sliced

Method
 

  1. Mix oats, chia seeds, almond milk, Greek yogurt, honey, and vanilla extract in a bowl until combined.
  2. Cook blueberries with lemon juice and zest until jammy, then let cool.
  3. Layer oat mixture and blueberry sauce in jars.
  4. Refrigerate overnight or at least 4 hours.
  5. Top with fresh fruit, granola, and honey before serving.

Notes

Best eaten within 4 days. Add toppings just before serving for crunch.
