Ingredients
  

Cookies
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.75 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 0.5 cup milk
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
Pastry Cream Filling
  • 1 cup milk
  • 2 egg yolks
  • 0.25 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
Ganache
  • 0.5 cup chocolate chips
  • 0.25 cup heavy cream

Equipment

Method
 

  1. Cook pastry cream until thick; chill.
  2. Cream butter and sugar; add egg and vanilla.
  3. Whisk dry ingredients; combine alternating with milk.
  4. Bake cookies 10–12 minutes.
  5. Make ganache by pouring warm cream over chocolate.
  6. Assemble cookies with pastry cream and top with ganache.

Notes

For neat assembly, pipe pastry cream onto cookies.
